We make a complete range of cooked octopus. This octopus, quite simply, is cooked “à la sétoise”. You’ll notice the Azaïs-Polito quality. You’ve got the texture, you’ve got the flavour, but you’ve also got the quantity. You’ll notice that a whole octopus is cooked in the pot, to the delight of the most discerning gourmets.

When you open the jar, you’ll find the whole octopus, which is unique in France. You will notice the colour of the octopus. It is in fact a rock octopus bought directly from the Sète fish auction. This rock octopus has a double suction cup. This is what distinguishes it from white octopus, which is much less tasty, but very often used in industrial production.

If you are in the presence of a real rock octopus, you will notice the thin pinkish membrane on the tentacles and on the body of the octopus. This is where all the flavour lies, and the reason for cooking it with its skin on. That’s what makes it so tasty on the palate.
