You are entering the home of a genuine artisan canner and manufacturer of products from “Utérois”. The Azaïs Polito brand is a benchmark in its home region of Occitanie.

For its Cétoise identity, its specific know-how and the quality of its products, which have become a must in a basket of regional seafood specialities from Occitanie. The Azaïs Polito cannery offers several ranges of fine fish specialities tailored to different distribution markets. We offer one of the most varied ranges of tinned fish on the French market.

For six decades, this family-run business has specialised in the production of seafood preserves, including the famous Cétoise specialities described above. But also Mediterranean fish specialities, such as bouillabaisse or poisson gantier, one of the finest on the market. These recipes have remained unchanged for over six decades, and are among the highest concentrations of fish on the market.

Products that have been made with respect for taste and tradition since 1963, behind which lies real know-how and a real story of men and women to tell to all lovers of authenticity. The Azaïs Polito brand has been known and recognised nationally for some thirty years as a rising French brand of top-of-the-range seafood products. During our visit, you’ll get to know the founding families and the vintage machines in our little vintage museum, all of whom contributed to the development of this famous expertise.

Never-before-seen photographs from family archives retrace the life of the port of Sète and its fishermen, as well as the moments that forged our Cétoise identity, such as the creation of the fishing port and its first fish auction, Italian immigration, the great catch of October 1956, and the Cétoise cod fishing epic of the 19th century. You’ll also discover all the labels, awards and distinctions won by our company and its CEO. Our mission is to educate young and old alike so that, by giving them a few pointers during the visit and a few concrete examples, they can recognise a genuine local product from an industrial copy.

More specifically, we hope that after visiting Azaïs Polito, consumer visitors will be able to tell the difference between an artisanal fish soup and an industrial fish soup. Thank you very much for choosing to visit us. We have a small bell in the canning factory showroom for you to ring if you need to contact our team.

We’ll be delighted to answer any questions you may have, give you advice or discuss our products with you.

We hope that this visit, which we want to be both militant and gourmet, will awaken your curiosity, your senses and your taste for the real thing. And we hope that, here or elsewhere, you’ll be able to find the soul of Seth in Azaïs Polito preserves.
